Mincemeat Pie

Ingredients for the Pastry:

  • 2 3/4 cups all-purpose flour; plus extra for dusting work surface
  • 16 tbsp unsalted butter, cold and cubed
  • 1 pinch salt
  • 1 egg, beaten
  • cold water, as needed

Ingredients for the Pie:

  • 1 27-ounce jar mincemeat*
  • 1 apple, finely chopped
  • zest 1 lemon
  • 2 tbsp confectioners’ sugar

*Jars of mincemeat can be extremely expensive and often unavailable. Recipe to make mincemeat is also included after this recipe.

Directions for Crust:

1. Gather the ingredients

2. Place the flour, butter, and salt into a large clean bowl.

3. Rub the butter quickly into the flour with your fingertips until the mixture resembles rough sand.

4. Stir the egg into the mixture using a cold knife.

5. Add the cold water, a teaspoon at a time, and stir until the mixture binds but is not sticky.

6. Wrap the dough in plastic wrap and chill for a minimum of 15 minutes and up to 30 minutes.

Assemble the Pie:

1. Gather the ingredients

2. Preheat oven to 400 F

3. Choose a 12-cup muffin tin or smaller

4. Roll out the flour about 1/8 inch thick and cut out circles

5. Line the muffin tin with the pastry

6. Mix the mincemeat, apple mixture, and lemon zest together

6. Fill the pastry-lined tin 2/3 full with mincemeat mixture

7. Roll out the remaining pastry to create lids for the tarts; be as decorative or fancy as desired

8. Dampen the edges of the tart with the cold water and press the lid on

9. Create a small hole or slit in each pie

10. Bake for 20 minutes with a standard tin pan or until golden brown

11. Let cool

12. Sprinkle with confectioners’ sugar

**If you don’t want to make the crust from scratch, pre-made dough can be purchased

Mincemeat Recipe

1 large apple, peeled and grated

1/2 cup raisins

1/2 cup golden sultanas (a type of raisin)

1/2 cup currants

1/2 cup dried cranberries

1/2 cup mixed dried fruit (such as apple, peach, sultana, apricots)

1/3 cup sugar

1/2 tsp cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

4 tablespoons butter, cubed

Zest and juice of an orange

Directions:

1. Add all the ingredients into a large saucepan over medium heat. Keep stirring.

2. Once butter fully melted, turn heat to low. Cover and cook for 15 minutes.

3. Remove the saucepan from the heat.

4. Allow to cool.

5. Store in sterilized glass if not using immediately.

Yields about 2 cups.
